My Favorite Summer Salad
2 tbsp feta cheese
1/4 c. or one handful broccoli slaw
1 tbsp nutritional yeast
1/2 small avocado
Strawberries, sliced / 1/2 c. blueberries / 2 small apricots, sliced
Seriously? Put all the items in a bowl, top with dressing, toss. Easier than pie.
A note on nutritional yeast: Ok so I lied, you might have to go to a "health food" store to find nutritional yeast, and by health food store I mean Whole Foods. When I get my computer back I'll toss some links in, but for the moment y'all have to deal with the fact that I'm typing on my new iPad keyboard (which is AWESOME) and have no idea how to do anything other than bold / italicize / insert photo. Sawie. So here are some deets on NY per MindBodyGreen: two teaspoons of nutritional yeast provide an entire day's worth of B12 for an average adult. In 2 tbsp of nutritional yeast there are 8 grams of protein, 2 grams of fiber, and 4% of the recommended daily intake for iron. It has the MOST - and I'm not kidding - delicious cheesy, nutty, parmesan-y flavor. It is SO good. (But of course I can't leave well enough alone and have to have cheese in my salad too...whatever.) I've heard loads of vegetarians and vegans use it as a cheese substitute...I choose to use it as a cheese enhancer. Just try it. And then come thank me and tell me how much you love it, because I PROMISE you will!
