Apples are so hot right now. And by so hot I mean so in season - they are AH-MAZING. Whole Foods has not let me down with the Honeycrisp selection thus far, and I have taken full advantage, of that you can be sure. One of my most favorite snacks growing up was this crazy combination (err..kind of) of apples, lemon juice and salt. No I am not messing with you, that's it, and it is the most refreshing, and simple and palate pleasing delight ever. Ever, ever, ever, ever, ever. I dream about this snack. Well, that's not entirely true - I never give myself enough time between munchings to dream about it. It's the perfect 'it's 4 o'clock and I'm not sure what to eat' or 'I'm craving salty but don't want chips' or 'What is sweet and salty and bitter all at the same time?' snack. Perfect. Vicky, our nannymomhousekeeper, used to make this all the time for my brother and me - she would use cucumbers and apples interchangeably - and serve it as our "salad" before our usual Ramen or Velveeta Shells and Cheese (we did have very sophisticated palates after all) dinner, and I have never grown out of it. It's just so good. I implore you to try and tell me it's bad. Seriously. Do it.
Apples with Lemon and Salt (creative, right?)
Cut the apple in to chunks and place in bowl. Slice lemon and squeeze juice over the apple shaking the bowl once between halves to ensure equal coverage. Sprinkle salt on top and shake again as per lemon juice coverage. ENJOY. Now, tell me that wasn't life changing.
